To make AMA, the base is the best Hondarrabi Zerrati from Astoreka, a 1,8ha parcel of vineyard. Once the clean must was obtained, 10% of total was moved to new French new-grain oak barrels from the Allary cooperage. This 10% of must was fermented within the barrels at a low temperature for 2 months. Once the fermentation was completed in the last barrel, the barrels were decanted to a stainless steel tank, where an aging process on fine lees took place for approximately 22 months. The other 90% of the must was fermented in stainless steel on it's fine lees also for 22 months. Subsequently, the cleaning process by means of decantation started of all the wine, which lasted a minimum of 4 months, during which the blended wine was kept in stainless steel tanks. Approximately 24 months after the harvest the wine was bottled, thus beginning its bottle maturation process. Maturation within the bottle allows the wood to integrate even more with the entire wine blend, allowing fruit flavours from the grape to surface in harmony with the subtle wood ageing of the 10% of the total blend.

Golden yellow colour with green hues, clean and bright.

Tuoksu

Clean and intense aroma of ripe white fruits, with a citrus background reminiscent of pink grapefruit. In the background, notes of toast and bakery scents (brioche & croissant) that come from part barrel fermentation.

Maku

Strong and powerful palette with good weight, hints of ripe apple, citrus and tropical fruit. Background of elegant smoke and butter but wrapped in fresh acidity ensuring a long life for this wine and a fantastic evolution during ageing. Intense and tasty.

Ruokasuositus

The elegant structure of this wine makes it fresh and not heavy, a perfect match for fish, white meat and veal, cheese and can match almost any dish regardless of it's intensity.
